White Shrimp
The white shrimp is called the "jewel of Toyama Bay" because of its mysterious, transparent pink appearance. It has a unique creamy texture and an exquisite, rich sweetness. It can be enjoyed in a variety of ways, such as sashimi, sushi, kombu-jime, clear soup, and fried.
Firefly Squid
Firefly squids are known as the "mystery of Toyama Bay" because of the pale blue light they emit. The sea area where they live in groups has been designated a special natural monument.
Winter Yellowtail
Yellowtail caught in winter in Toyama Bay, known as a natural fish pond, was selected as the "Fish of Toyama Prefecture" in 1996, and is also known as the king of Toyama Bay. In particular, the shabu-shabu made with "Himi Yellowtail," the highest quality brand of yellowtail caught at Himi Fishing Port, is exquisite.
Takashi's Red Crab
The shell and legs are red even before boiling, and in Toyama Prefecture, red snow crabs that meet certain standards in weight and shell size are called "Koshi no Akagani" (red crabs of Koshi), tagged and branded. With their sweet, thick meat and the richness of the miso inside the shell, they are popular as a delicious crab unique to Toyama that rivals snow crabs.
Toyama Bay Sushi
As the name suggests, "Toyama Bay Sushi" is a set of 10 pieces of sushi made with seasonal local fish from Toyama Bay. It also comes with rice made from Toyama Prefecture rice and a local soup, so you can enjoy Toyama's local ingredients to your heart's content.
Toyama Black Ramen
It was created around 1945. In 1945, just before the end of World War II, Toyama City was bombed, and the city was flooded with workers hoping to meet the demand for construction work during the reconstruction effort. It is said that the dish originated from a thick, soy sauce ramen soup made to provide salt for the sweaty manual laborers. Its black appearance has a mysterious charm that arouses curiosity.
Trout Sushi
Masu sushi is made with beautiful salted fillets of trout and high-quality rice, and is carefully crafted one by one. It is said to have originated in the Edo period, when Yoshimura Shinpachi, a samurai of the Toyama domain, presented it to Maeda Toshioki, the third feudal lord. Known as a local dish of Toyama Prefecture, you can enjoy a variety of flavors at each restaurant, and it is also popular as an ekiben (train station lunch box).
Turnip Sushi
Turnip sushi is a type of matured sushi made by placing fish such as yellowtail or mackerel between cuts in a large turnip and letting it ferment.
In Toyama Prefecture, it is mainly produced in the western part of the prefecture, and is used as a dish to eat during the New Year holidays, and in recent years has also become a luxury gift item.
