Hagi's summer mandarins began to be cultivated at the beginning of the Meiji era, encouraged by former Hagi feudal lord Obata Takamasa, to provide economic relief to samurai who had lost their stipends when the feudal domains were abolished and prefectures were established. A confectioner who had his eye on summer mandarins, which had become a Hagi specialty, conducted extensive research and created a confectionery in which the peels were boiled in sugar, then coated with sugar and dried. He then came up with "Natsumikan Maruzuke," in which the fruit was hollowed out, the peels boiled in syrup, and summer mandarin yokan was poured into the peels, which were then allowed to harden. It has now become synonymous with Hagi souvenirs.

Hagi ware, a popular souvenir, began in 1604 when Korean potters Ri Shokwang (Yamamura family) and Ri Kei (Saka family) were brought back by feudal lord Mori Terumoto and built an official kiln in the castle town. Since ancient times, Hagi has been producing pottery that suits the tastes of tea masters, so much so that the saying "First Raku, second Hagi, third Karatsu" has been used to describe the two. Crazing occurs due to the quality of the glaze mixed with the raw clay, and tea and sake permeate the pottery with use, causing the color of the surface to change appropriately and creating a mellow taste called "nanabake." Subtle patterns are also popular, and there are many kilns in the city.
