Hot Spring Specialties

Izu Shirahama specialty pressed sushi "Sanma sushi"
Sanma sushi is a pressed sushi dish made by splitting a pacific saury, soaking it in vinegar, and placing it on sushi rice. During the Muromachi period, a priest at Shirahama Shrine prayed after a poor harvest, and a school of pacific saury washed up on the shore. Since the priest served pacific saury on rice, it has become a custom at the annual autumn festival. At the end of the Edo period, this changed to sanma musubi, and after a few days it took on a sour taste and had a good flavor, so it became a Kansai-style pressed sushi dish using sweet vinegar. It can now be purchased at places such as the Shirahama Tourist Drive-In.

The annual festival of Shirahama Shrine, the oldest shrine in Izu, is the "Hidate Festival and Sanbaso." It is an ancient Izu fire festival with a fantastical atmosphere. The Hidate Festival, which follows the eve of the annual festival, is said to be a signal to the islands' queens and their children that the festival has begun, with seven bonfires lit. At the end of the festival, a gohei-ryu festival is held, in which a bamboo stick about the height of a person with paper attached to it is floated towards the Izu Seven Islands, marking the successful completion of the festival. The dance "Sanbaso" that is dedicated to the festival is an intangible cultural property designated by Shimoda City.
