加茂湖は大佐渡山脈からの清らかな淡水に、植物性のプランクトンが豊富な日本海の水が混じる汽水湖で、環境のよさからカキの成長が早く、一般的な養殖のカキが生育に2～3年かけ出荷されるところ、1年の若々しい段階で十分に出荷が可能だ。カキ特有の磯臭さがないのが特徴で、身が締まって味が濃く、冬は新鮮な殻付き真ガキをカキ小屋で楽しめる。
