Hirado Chanpon from Nagasaki Prefecture is on par with Nagasaki and Obama. Its soup is based on chicken (or pork bones) and flying fish, and its biggest feature is that it uses flying fish not only in the stock but also in the paste, bringing out a unique flavor. This is typical of Hirado, a treasure trove of seafood blessed with fish. It is filled with seafood ingredients, kamaboko, and vegetables. The noodles are basically made with tora-ashu (a type of lye) made by Morito Seimenjo.

Long ago, countries such as Spain, Portugal and the Netherlands brought medicine, science and religion to Japan. Most of these were rejected due to the isolationist policy, but ingredients such as sugar and wheat, as well as sweets and bread, gradually spread throughout Japan. This is because missionaries accompanying the Dutch trading chief (capitan) on his annual visit to Edo sowed wheat seeds in villages along the road and taught them how to make bread and sweets. The road from Nagasaki to Kokura that the capitan walked was called the "Sugar Road," and Nanban sweets such as castella and castella cakes took root there.
