Hot Spring Specialties

"Tsukeba cuisine" - a seasonal feature of early summer at hot springs
Togura Kamiyamada Onsen is famous for its tsukeba dishes made with minnows (dace) from the Chikuma River, a seasonal sight in early summer. The original meaning of tsukeba is the fishing gear used to catch minnows in the Chikuma River from spring to early summer. At the tsukeba hut in Togura Kamiyamada Onsen's green park, you can enjoy wild minnows grilled with salt, grilled fish called "Uo-da" with Japanese pepper miso, tempura, fried chicken, and more. Minnows stop eating during the spawning season, so their innards are clean and have a mild taste without the fishy smell typical of river fish.
