At Shichimi Onsen, the inns serve the local dish "Hinnobe Dango Soup." Hinnobe dango, also written as "Hinnobe dango," is a local dish from the northern Shinano region. Wheat flour is kneaded thoroughly by hand, left to sit overnight, flattened to an easy-to-eat thickness, and then picked up little by little with the fingers, stretched, and torn off. It has a chewy, smooth texture and goes down smoothly, different from dango and suiton. The soup, which is made with plenty of vegetables and seasoned with soy sauce and miso, has a nostalgic taste.

Shichimi Onsen is located in the deepest part of Matsukawa Valley in the Shinshu Takayama Hot Springs area. This hot spring is known as a hidden hot spring in Shinshu's best autumn foliage spot, so much so that there is even an inn called "Momijikan" located there. Due to the difference in altitude, the autumn leaves in the area, such as maples, beeches, rowan and other broadleaf trees, can be enjoyed for a long period of time as they turn red and yellow.
