In the area around the border of northern Shinano, "Bamboo Leaf Sushi" is a traditional dish made on a plate using Japanese bamboo grass, which has a strong antiseptic effect, and is made on special occasions. Around Hakuba, it is a simple dish made by lightly pressing locally grown mushrooms, wild vegetables, walnuts, pickles to add a salty accent, and toppings of your choice, such as fried tofu, marinated trout, chikuwa, ham, crab sticks, or canned tuna. The sasa sushi of northern Shinano is also famous as Kenshin sushi around the border with Niigata, but around Hakuba, ingredients influenced by Toyama can also be seen.

Hakuba Sanso, opened as a summit hut in 1906, was the first mountain hut in Japan, and with the dawn of modern mountaineering in Japan, climbing Mt. Hakuba was thrust into the limelight. German teacher Fukuoka Takayuki also introduced Austrian skiing to Hakuba, which spread to mountain guides in Hakuba who supported the mountaineering boom, leading to the development of ski resorts in harmony with the magnificent nature and the training of ski instructors. Even today, the area is bustling with people climbing in the summer and skiing in the winter, and there are many hot spring facilities to soothe the fatigue of those who have been exhausted.
