The flesh is plump and the skin is crispy, offering a unique texture that is unforgettable once tasted. Its distinctive flavor comes from the gelatinous substance that spreads from the skin into the subcutaneous layer. Rich in collagen, it was known among fishermen as a nourishing and tonic ingredient. It is delicious when served with a vinegar-based sauce or garlic leaf nuta.
