Hot Spring Specialties

Ren's Yokan, a specialty sweet of Yamashiro Onsen
Ren Eishodo, located in front of the public baths of Yamashiro Onsen, has a history of around 200 years since the founder learned the manufacturing technique from a traveling monk. It is a healthy yokan made only from natural ingredients - azuki beans, agar, and sugar - and is characterized by a refined sweetness without any unpleasant taste while still retaining the full flavor of the azuki beans. During the Edo period, the shop was granted the title of official confectioner for the Maeda family of the Kaga Daishoji domain, which had a fiefdom of 100,000 koku, and has continued to preserve the taste and techniques of this long-established store since its founding in 1819.

Hot Springs

Yamashiro Onsen, which retains remnants of the Kaga Domain's bathhouse
The ancient Yamashiro Onsen, which boasts a history of 1300 years, flourished as a feudal domain hot spring during the Edo period. Maeda Toshitsune, the third lord of the Kaga domain, appointed Horiguchi Muneya as a traveller and visited the hot springs many times for medical treatment. At the time, the feudal domain lord bathed in a special bath called Kamiyu, while common people bathed in Shimoyu. In Yamashiro Onsen, a townscape called Yunokuruwa was formed, with inns lined up around a communal bath called Soyu, and this style remains to this day.
