"Houraku-yaki" is a spectacular steamed dish made in a clay pot.
"Horaku-yaki" is a local dish from Awaji Island. Nachi black stones and kelp are placed in a clay pot (Horaku), and seafood such as sea bream and turban shells are placed on top and steamed, but sometimes the Horaku is covered with heated black stones. It is characterized by the tenderness of the meat that falls apart in the mouth and the concentrated umami of the seafood. It is said to have started when female divers presented seafood to the courtiers of Yamato during the Nara period when they went hunting in Ohara. In the old days, heated stones were laid on the beach, and sea bream wrapped in kelp was placed on top of them, and sand was poured over it before being grilled.
