Highly fragrant Japanese pepper grown in Oku-Hida
Hida sansho is a highly fragrant, excellent variety that has grown wild in this region since ancient times, and was even presented to the Tokugawa Shogun by the governor of Hida, which was a shogunate territory, during the Edo period. Even today, the berries are harvested by hand, bunch by bunch, from Jul. to Aug., dried in the shade and in the sun, the seeds and skin are separated, and only the skin is ground into powder using a pestle and stone mill. Hida sansho has a refreshing citrus scent and a good flavor that goes well with eel, yakitori, Chinese cuisine, and many other dishes.

Taruma Water, the best water in Oku-Hida
Taruma water, which springs from the Hitoegane mountain range at the foot of Mt. Norikura, is said to be the most famous spring in Oku-Hida. It is said that long ago, a beautiful young woman named Princess Taruma gave the water to Emperor Murakami, curing his illness, and the villagers who drink this water regularly tend to live long lives, are healthy and free of paralysis, so the water is known as the "water that prevents strokes." In addition to being used for cooking and drinking at inns and restaurants, there are several drinking fountains for Taruma water within the hot spring area. There is also Taruma Falls, where Taruma water trickles down, in the waterside park.
