Hohba miso is a recipe for grilled miso that has been popular in the Hida Takayama region for a long time. Sweet miso is placed on a hohba leaf, topped with dried bonito flakes, green onions, shredded shiitake mushrooms, and other ingredients, and then grilled together. The aroma and flavor that cannot be reproduced in other dishes, as well as the sound of the miso grilling, stimulate the five senses and whet the appetite. The Hida style is to eat it with whatever you like, without being particular about the ingredients. Recently, it has become popular to eat it with Hida beef on top, and souvenir sets of miso and hohba leaves are also sold.

Hida Takayama Morning Market is one of the three biggest morning markets in Japan. Its roots lie in a "market" from the Edo period, and from the mid-Meiji period farmers began displaying vegetables there. Currently, it is held every morning in two locations, in front of the Jinya Square and along the Miyagawa River. Locally picked vegetables are cheap and fresh. There is also handmade miso, pickles, and folk crafts on offer. Food tours are also popular, with a wide variety to choose from, including grilled Hida beef skewers, soy sauce-flavored mitarashi dango, and Hida Takayama Morning Market-exclusive soft serve ice creams "Hida Peach Soft Serve" and "Local Sake Soft Serve."
