Hot Spring Specialties

"Hot Spring Persimmons" - their bitterness removed using hot spring water
"Onsen kaki" is made by soaking astringent persimmons in hot springs instead of drying them (anpo-gaki). The persimmons used are "Hachiya-gaki", a type of astringent persimmon with a pointed tip. After soaking them in sulfur spring water for around 12 hours, they are sealed in a plastic bag and the hot spring ingredients remove the astringency in around a week. It is said that mixing salt into the hot spring water also enhances the umami flavor. The sensation of eating astringent persimmons in a form that is closer to eating them raw, rather than dried, is a fresh experience. They are served as desserts and sweets at the various inns in Takayu Onsen.

Hot Springs

Mokichi wrote about his longing for home in the Azuma Mountain Range.
Saito Mokichi, a Meiji era writer, was one of those who loved Takayu, and stayed there for about a week in 1916. On the banks of Okenuma on the Bandai Azuma Skyline, there is a monument bearing the poem "Five days of rain have finally come, the Azuma no Sagiri on the mountainside, the sky is rising." This is a poem he read while staying at Azuma-ya with a friend from Fukushima. He also left behind over 20 other poems related to Mt. Azuma, such as "People pass through the hot springs that flow through the mountain gorges, the sacred hot springs of Mt. Azuma, and on the way out of Takayu, "As I descend Mt. Azuma, I hear the voices of the cicadas in the forest at the foot of the mountain."
