Seiko crab is a female snow crab, and its appeal lies in the uchiko, which are the ovaries, and the sotoko, which are found in the abdominal cavity. The uchiko is orange in color and has a rich, chewy texture. The sotoko changes color depending on the maturity of the eggs.
