The summer "chilled" culture was born from the fact that it's hot even though it's snowy country!
In the summer, barber shops across the prefecture put up banners announcing "We've started serving chilled shampoo." Chilled shampoo is a method of washing hair that was developed in Yamagata City. A special shampoo is chilled to ice-cold temperature using ice and a refrigerator, and then hair is lathered and washed.
Yamagata has Image of being a snowy and cool region, but in fact, the summers are very hot, and the prefecture held the national record for highest temperature (40.8℃) for a long time. However, Yamagata also has a deep-rooted "cooling" culture to help people get through the summer.
For example, there is a "cold" version of piping hot ramen. This version is called "cold ramen."
Apparently, this dish was inspired by a comment that "Since there are hot and cold soba noodles, I would like to try cold ramen as well." If you visit Yamagata in the summer, be sure to experience the "hiyashi" culture for yourself.

Yamagata Prefecture is blessed with rich nature, including the Zao mountain range, Mt. Chokaisan (Mt. Chokai), and the three mountains of Dewa (Mt. Haguro, Mt. Gassan, and Mt. Yudono). Mogami River
Yamagata has many delicious specialties such as fruit cultivation including cherries and La France, rice, buckwheat noodles, and brand-name beef and pork.
Yamagata's cherries are at their best in the morning, when the fruit is especially firm. The texture that can only be tasted locally is one of the best parts of the trip. Another local delicacy is "Imoni Nabe," a typical Yamagata dish of taro, beef, konnyaku, leeks, etc., seasoned with soy sauce, and cooked in a large pot. At the "Japan's No. 1 Imoni Festival," a large pot measuring more than 6 meters in length is said to make an appearance. Other popular souvenirs include tama-konnyaku and igamochi (rice cakes).
Be sure to try them in between visits to the hot springs and sacred sites.
